Baked Sliced Tomatoes

12 thick slices tomato (about 4-5 medium tomatoes)
1/2 (5 oz) pkg. cheese and garlic croutons
1/2 stick butter or margarine
1/4 cup finely chopped onion
1 cup grated cheese

Preheat oven to 350. Butter a 8 x 8 or 9 x 9 inch baking pan. Place tomato slices in the baking pan. Crush croutons and place in a mixing bowl. Stir in onion. Melt butter or margarine and stir into crouton mixture until completely mixed. Cover tomatoes with crouton mixture. Sprinkle grated cheese over all. Bake for 30 minutes or until heated through and cheese is completely melted.

Recipe can be doubled easily.

I would think it would be worth trying. Let me know how it turns out. Best new recipe I've tried in a long while.

I think it would be good in a pie shell as it reminded me of Tomato Pie which is a favorite in this area.

We have had this several times more and have really enjoyed it.

I've already had to make it again -- by popular demand around our house! I doubled it the 2nd time!
Just wish I had home-grown tomatoes, guess I'll have to put a garden in next year just for this recipe! :D
