Quick supper

Postby Jim & Judy » Tue Dec 26, 2006 4:06 pm

We are always looking for an easy-to-fix meal. Here is one:
Chicken and Rice

1 pkg. of Uncle Ben's prepared long-grain and wild rice (these are already cooked and microwave in 90 seconds)
1 1/2 c. cooked chicken or turkey (can use a can of chicken breast or leftovers - works OK either way)
1 c. chopped onion
1 c. chopped celery
1 Tblsp. margarine or butter
1 can cream of chicken or cream of mushroom soup

Saute onion and celery in pan until soft, add chicken, soup, and stir until heated. Add heated rice and serve. ( you can also add vegetables such as carrots, peas, mushrooms or whatever. I have also added a little shredded cheese in this). I like it because all the ingredients are things I usually have on hand, it's fast and is a good way to use up leftovers....

I'm confused.
Is the soup mixed with the rice?
Or the soup is on the side?
